Basil & Tomato Bow Pasta

Ingredients
- 1 tbsp Olive Oil
- 2 Sprigs Rosemary
- 2 Cloves Garlic
- 1 lb Tomatoes
- 1 tbsp Sun-dried Tomato Paste
- 12 Fresh Basil Leaves
- Salt
- Pepper
- 1 1/2 lb Pasta
Instructions
- Place the oil, garlic, tomatoes and rosemary, with the tomatoes cut in half skin side up, in a shallow roasting pan.
- Drizzle with a little Olive Oil and cook under a broiler or preheated grill for 20 minutes or until the tomato skins are slightly charred.
- Once charred, remove from broiler and peel the skin from the tomatoes than roughly chop the tomato and place in a bowl.
- Squeeze the pulp from the roasted garlic cloves and mix with the tomatoes and the sun-dried tomato paste
- Tear the Basil leaves into small pieces and stir them into the sauce. Season with a pinch of salt and pepper to taste.
- Bring a pot of water to boil and add the bow pasta, remove and drain when pasta can be easily cut with a fork or table knife.
- Gently heat the tomato and basil sauce but do not boil.
- Stir in drained pasta bows
